This weekend I made a very healthy and colourful salad. My husband loved it a lot, so I want to share the recipe with you. It’s from the book “Lieknieji gurmanai”. Amazing book!!! It really inspired me to be a better wife :)))!
Ingredients for two servings:
1 broccoli
1 carrot
1 garlic clove
1 fresh chili pepper (I changed it for the red pepper)
Cashews
A handful of raisins (instead of it I used cranberries)
1 tablespoon lemon juice
salt
With vegetable peeler cut the carrot into very thin strips and place in a plate of salad.
Use one spoon of oil and cook broccoli about one minute. After add the rest ingredients – chili pepper, cashews and raisins.
Add the garlic. When you will start to feel aromat and 1 spoon of lemon juice. Season it with salt and put on the prepared carrots.
Enjoy!!! This recipe is good for vegans!
